Nut and seed
milks are easy to make, and some are delicious. Many of these
are high in calcium with no cholesterol.
Grind 1/2 cup raw nuts or seeds
to a fine powder. Leave in food processor or blender and add 1
cup of water, the vanilla extract and if you like, maple syrup,
honey or some other sweetener. Blend for five minutes.
Stop and add one more cup of water, then blend for five more
minutes.
Strain the milk with a colander
lined with two sheets of cheesecloth. Strain a second time.
This milk can be stored for about 4 to 5 days in the refrigerator.
Use the leftover nut fiber for a nutscrub in the shower, for baking
or for your compost pile.
Some delicious nuts to try are
almonds, cashews and sesame seeds.
